Method

  1. Press the tofu in a tofu press or between two clean cloths under a weight.
  2. In a large pot cook the peanut oil and sugar on a medium heat until caramelised.
  3. Add the remaining ingredients except the soy sauce with 800ml water and bring to the boil.
  4. Simmer on a medium heat until thickened.
  5. Add soy sauce to season.
  6. Serve hot on steamed rice.
