Chicken Khao Soi

Serves 4

  1. Fry No Chicken chunks in vegetable oil, then add garlic puree, chopped ginger and red curry paste.
  2. Cook, stirring gently, for 3-4 minutes until well mixed together.
  3. Add coconut milk and bring to the boil.
  4. Season with salt and simmer for 20 minutes.
  5. Serve on cooked noodles with sliced red chillies, spring onions, pepper flakes and sesame with lime wedges on the side.
