Chorizo and Charred Corn Salad

  1. Boil corn cobs for 10 minutes.
  2. Dry and char on a grill or barbecue at the same time as cooking the chorizo (8 minutes).
  3. Mix the rocket with tomatoes and dress with chilli oil.
  4. Arrange as shown, finishing with a drizzle of chilli oil.
