Method

  1. Sweat onion, ginger and garlic in the coconut oil for 10 minutes before adding the curry powder and tomato paste and frying for 2.
  2. In a separate pan fry the MOCK lamb on a high heat until coloured on all sides, then add the peppers.
  3. Add the bay leaf and the rice.
  4. Add 1 litre vegetable bouillon and cook until rice is cooked through.
  5. Fold in red pesto and top with pan fried plantain.
