Gochujang Tofu Noodles

Serves 4

Recipes Gochujang Tofu Noodles 1 2X



  1. Cut the tofu into slabs. Press between cloth with a weight on top to draw out the water for at least 30 minutes.
  2. Cook the glass noodles in 4 litres of water with the soy sauce.
  3. Cut the aubergine into slices, rub with olive oil and garlic, then grill.
  4. Roast the red pepper and then slice.
  5. Pop the quinoa in a little oil and dry on a paper towel.
  6. Brush the dry tofu with gochujang and grill.
  7. Mix the pepper and spring onions with the cooked noodles.
  8. Arrange on the plate as shown.
