Japanese Soufflé Pancakes

Ingredients

Method

  1. Mix together flour, sugar, baking powder, bicarbonate of soda and a pinch of salt.
  2. In a separate bowl, mix the oat milk, cider vinegar and vanilla paste.
  3. Stir both mixtures together, being careful not to overwork.
  4. In a non-stick frying pan, spray a small amount of oil and place over a medium heat.
  5. Add pancake batter and slowly cook until puffed up, then flip over.
  6. Repeat until all the mix has been used up.
  7. Mix half the agave syrup with the black sesame paste.
  8. Arrange on plate as shown, finishing with a dusting of matcha powder.
