Mixed Vegetable Handi

Mixed Vegetable Handi


  • 750g Handi Cooking Sauce (ready to use) • Add to basket
  • 50g Sunflower oil • Add to basket
  • 200g New potatoes, quartered lengthways
  • 200g Carrots, cut into 1cm thick slices
  • 125g Parsnips, cut into batons
  • 50g Frozen peas
  • 100g Cauliflower florets
  • 125g French beans, trimmed, halved
  • 300g White Basmati Rice • Add to basket
  • 120g Mango Sweet Chilli Sauce • Out of stock


1. Heat oven to 175°C.
2. Place the potatoes, parsnips and carrots in a roasting tin and mix with oil, season with salt.
3. Roast in the oven until lightly golden, about 15 minutes.
4. Drain off the vegetables, place in a pan, add the Handi sauce and bring to the boil.
5. Add the remaining vegetables and simmer until cooked, 15-20 minutes.
6. Serve with rice and mango chilli sauce.
