  1. Put 250g sushi rice in a bowl and wash with cold water. Repeat 3 to 4 times and then drain the rice with a sieve. Place the washed rice in a saucepan with 330ml of water and bring to the boil. Simmer for 10 minutes with the lid on. Turn off the heat and allow to stand for 25-30 minutes. Do not open the lid.
  2. Mix the Sriracha sauce and the mayonnaise together.
  3. Heat the rice vinegar and palm sugar together and simmer until the sugar is dissolved. Add the sliced artichoke and allow to cool.
  4. Build the sushi with combinations you prefer.
