Plum and Orange Eton Mess, Vanilla Ice Cream, Cinnamon Syrup

Method

  1. Make the syrup by boiling 100g sugar with 100g water until temperature reaches 115°C
  2. Let the syrup cool to room temperature then stir in the cinnamon
  3. Whisk the cream, remaining sugar and the vanilla until soft peaks form
  4. Segment oranges and cut in half, make wedges of plums
  5. Arrange all ingredients on plate as shown
