Shrimp and Saffron Fregola

Shrimp And Saffron Fregola Recipe Shot



  1. Pan fry Shrimpz in olive oil until coloured.
  2. Remove from the pan and add shallots, peppers and garlic.
  3. Sweat on a low heat until soft and fragrant.
  4. Add fregola and fry for 1 minute.
  5. Make bouillon up with 500ml water and add the saffron.
  6. Add wine to fregola and cook until liquid has evaporated.
  7. Add bouillon and seaweed and bring to the boil.
  8. Simmer for 8 minutes then add the Shrimpz.
  9. Cook until fregola is al dente, topping up with water if needed.
  10. 10.Add tomatoes, season with salt and lemon juice and finish with parsley.
