Smoked Tofu and Ginger Broth

  1. Boil the water, then add dried mushrooms. Bring back to the boil, then reduce heat and skim.
  2. Remove from the heat and when temperature drops to 90°C add kombu sheets.
  3. Leave to infuse for 1 hour.
  4. Whisk in miso and julienne ginger, then bring back up to 90°C.
  5. Add tofu and mushrooms.
  6. Taste and season with salt.
  7. When ready pour broth into serving bowl with tofu and other ingredients.
  8. Top with torn shiso leaves, picked samphire and puffed quinoa.
