Thai Red 'Chicken' Curry

Serves 4

  1. Pan fry the Thai red curry paste for 2 minutes to release the spices and oils.
  2. Add coconut milk and bring to the boil before adding vegetables.
  3. In a separate pan, fry the Heura chicken until crisp and coloured.
  4. Reduce curry sauce by a third then add sriracha chilli sauce, palm sugar, the cooked Heura chicken, coriander and turmeric.
  5. Season with lime zest and juice and more salt if needed.
