Wild Garlic, Rocket & Pine Nut Pizzette

Serves 1

  1. Mix the yeast with the warm water and a pinch of caster sugar and leave in a warm place to activate.
  2. In a stand mixer add the flour, olive oil and salt and mix together for 1 minutes before adding the yeast mix.
  3. Continue to mix on a low speed for 5 minutes until gluten has developed and the dough comes away from the sides of the bowl in a ball.
  4. Leave dough in a covered bowl to double in size.
  5. Make into an even ball and leave covered in the fridge overnight.
  6. Roll out dough thinly into a round pizza shape.
  7. Blend tomatoes with a little salt and spread over the prepared base.
  8. Add cubed mozzarisella, then bake in a hot oven for 6 minutes.
  9. Top with remaining ingredients and serve.
