Zalmon Tataki

Method

  1. Spread a very thin layer of wasabi on the zalmon, then sprinkle with furikake seasoning around all the sides.
  2. Wrap in clingfilm and refrigerate for 30 minutes.
  3. When the zalmon is ready, boil a pan of water. Add kale to the pan and blanche for 3 minutes.
  4. Drain the kale and add miso, stirring until it melts.
  5. Thinly slice the zalmon and arrange with the miso kale and pickled natural sushi ginger on the plate as shown.
