We're loving all the West African inspired dishes around right now. Recognition in 2021 of the restaurant Ikoyi in St. James, London as the "one to watch" at the World's 50 best restaurant awards was a big step and is bound to up the focus on Sub Saharan West African food. Whilst there's of course lots of diversity over the 17 countries that make up the region, the 3 base ingredients which are prevalent in most dishes are tomatoes, onions and chillies. Here are our plant-based takes on some delicious soups and stews, packed with flavour and a nod to West African cuisine.
